Gomero cheese is one of the most valued products of the island''s cuisine. It is made from raw goat milk or mixture of goat and sheep. Fresh, semi-cured and "hard" (cured) cheese is produced on the island.
The characteristics and flavor vary according to its cure: from the soft and delicate flavor of fresh cheese, to the strong and aroma flavor of cured cheese. The fact that it is a characteristic ingredient of other products such as almogrote or some sweets such as curd cake speaks of its importance in Gomera cuisine.
